		<content type="html"><![CDATA[Thanks so much for taking the time to comment.  I agree that we need to move the definition of artisan or artisinal bread to one that focuses on specific production methods and type of ingredients (using organic products, handcrafting and time to generate the wonderful flavors and textures we've come to associate with these breads, cheeses and wines.  Thanks for illustrating that more and more people are becoming more familiar and comfortable with the techniques and quality of ingredients expressed with these terms.]]></content>

		<content type="html"><![CDATA[I have a problem with definitions of artisanal foods that take pains to privilege European techniques.  I believe that the term "artisanal" should refer to the method of production, and these methods (small batches made primarily by hand using traditional methods that celebrates the art of the production) are found all over the world. Our ethnocentrism shows when we attribute the term "artisan" to European or American methods.  What a sadly limiting view of the culinary art.]]></content>
